Forks over knives
I saw an exciting documentary film while in Antigua recently. The title is FORKS OVER KNIVES. Most of the information confirmed what I had personally researched in Chiropractic College over 37 years ago. The information was put together in an interesting and soul searching manner.
The film was inspired by discoveries made during the cutting- edge research by top biochemists and surgeons. FORKS OVER KNIVES examines the ground breaking idea that most, if not all of the degenerative diseases that afflict us can be controlled, or even reversed, by rejecting animal based products and processed foods in our diet. Cameras follow patients who have chronic conditions, from heart disease to diabetes and even several forms of cancer, and show how adopting a whole food, plant based diet as the primary medicine to treat their ailments has remarkable results. The idea of food medicine is put to the test as leading experts tackle the issue of diet and disease through medical and laboratory testing. The health benefits of a plant eating preference goes well beyond helping ourselves but also extends as far as helping the planet.
I have been a vegetarian for over 36 years and can personally attest to the health benefits of not consuming beef, pork, lamb, poultry and dairy. It is absolutely imperative that Dominicans rethink their association with a high protein animal diet since we live on an island of exquisite herbs, vegetables, fruits, nuts and seeds. Coconut milk, water, jelly and oil in and of itself offers tremendous health benefits in a plant based diet. Do I need to say more?
